Hey all, my summer vacay is ending soon so I’m trying to get back into doing stuff...and healthiness...and probably not have two Oreo ice creams for dinner...again....soon. Prep For The Week! Prep Time: 1 hr Ingredients • 6 Ziploc round containers , the number of containers depends on how much produce you are chopping...I average 8-12 on prep day • 18 Eggs, hard boil 6 and have extra for breakfast burritos and life • 1 Bunch of carrots • 2 Red Bell Peppers • 3 Rubbermaid containers • 1 Salad in a bag Preparation Steps 1. Rinse produce under cold water 2. Peel carrots and chop into sticks, store in a container (I like the round ziplock ones). 3. Slice peppers and put in storage container 4. Divide up salad in a bag into 3 containers (I like Rubbermaid, but you do you) 5. Hard-boiled eggs...how to: I can only hard-boil six eggs at a time, otherwise things get weird. Place six eggs in a medium sauce pan. Cover with water (fill the pan above the eggs about an 1/2 inch. Bring eggs to boil (put pan on stove and turn to highest stove setting). When water has bubbles coming to the surface repeatedly and quickly (this is called a rolling boil), turn off heat, place lid over pan, let sit for 15 min. After 15 min, place hardboiled eggs in an ice bath (a bowl of water with some ice cubes in it) after finished cooking. It will help the peel separate from the egg and make it easier to peel. Store in the round ziploc containers so that there might be a chance your whole fridge doesn’t smell like eggs. White Chicken Chili |
